Made This Yesterday...

Big Al's Louisiana Shrimp and Crab Bisque

 

 

1 teaspoon olive oil

1 lb. peeled shrimp

1 pint peeled and cooked crab meat

3 strips of bacon sliced thin, and I DO mean thin

1 medium yellow onion (diced finely)

1/2 bell pepper (diced finely)

1/2 stalk celery (diced finely)

4 cloves garlic (minced)

2 Tablespoons dried parsley

3 Tablespoons Old Bay Seafood Seasoning

1 teaspoon Creole or Cajun Seasoning

1 pint half and half

2 cans of 'Pet milk"...(evaporated milk)

1 can whole kernel corn

1 can "diced" potatoes

 

 

What I did is put about 1 t spoon of olive oil in a Large pot, placed the bacon in there and started rendering it...on medium low heat...about half way through, I put in the onions, celery, and bell pepper...and uncooked shrimp...COVER that...The shrimp are going to release some very tasty juices that you want to keep!!! Pop a top my friend...and Wait...about 15 minutes...Ok, the shrimp are JUST cooked through...Now add the crab meat and stir. Now it's time for the Old Bay, and garlic...Stir it in thoroughly, and add the half and half, and pet milk. Drain the corn, but keep the liquid from the potatoes, and add that now too...Put in your Creole or Cajun seasonings, and parsley, and let that come up JUST to a boil...then turn it down and simmer for 1.5 hrs., stirring Not constantly, but, keep an eye on it so as it doesn't stick, or burn...and that's it!!!

It's a nut house here, but it's a danged fine nut house.

 

As cholesterol bombs go, your bisque sounds pretty decent.

 

For my taste, any bisque is better when served up with a bitter brew by women in their scanties.

Naaahhh...it's been in the garage a few weeks now...i just got home on the 29th Oct....mounted it with my new Corbin two up on the 30th and went for a scoot...jesus these upgrades can get addictive...thanks bro! :D

Looks good to me. Up my way our cream of crab, crab bisque and various seafood soups are part of our kitchen culture. I am a native of the Chesapeake Bay region and cooking good seafood is expected of us and we try not to disappoint...

 

Also, here on the Shore, when men cook the girls make sure that they know it is appreciated ;) We want them to have incentive to keep up the good work.

 

I printed your recipe and will stir some up when the cold comes.

 

You can't take this stuff to heart. If you had been on here longer you would know what I mean.This forum is about Indian Motorcycles...and any thing else anyone decides they want to post or comment on...

Looks good to me. Up my way our cream of crab, crab bisque and various seafood soups are part of our kitchen culture. I am a native of the Chesapeake Bay region and cooking good seafood is expected of us and we try not to disappoint...

 

Also, here on the Shore, when men cook the girls make sure that they know it is appreciated ;) We want them to have incentive to keep up the good work.

 

I printed your recipe and will stir some up when the cold comes.

 

You can't take this stuff to heart. If you had been on here longer you would know what I mean.This forum is about Indian Motorcycles...and any thing else anyone decides they want to post or comment on...

Put Al's recipe to use...it is time you got in the kitchen and cooked that girl up some good eats !

 

If you ever find your way to this side of the country I will make sure you get some crab soup. I have an old island recipe passed down through the ages that is so good it will make you smack grandma across the table :)

So I gotta bring my grandma ? :unsure: Sure would love to get out that way some day. Prolly take a couple years at this rate, less business picks up a lot, so we can catch up with the bills.

Course you could always come out here and we could do a crab/abalone cook off.

Smack grandma 'cross the table is a local saying/joke. It means the food was so good you couldn't help but smack granny...never mind, I am having trouble making this funny by typing an explanation. Trust me, we don't smack granny around :)

 

If me and Bobby Flay show up you may be in trouble because it will be time for a throwdown.

We lived on seafood for similar reasons as my Pops was a waterman with seven kids. We ate alot of game, also. I have never had a Digby scallop. I will Google them so I can see what I am missing.

Me, too...and I have some crabmeat in the freezer. No soup though. It is backfin and too good to throw in soup. I plan to make some crabcakes for Bud and also take one or two over to Matt. He keeps my horse for me and I want to keep him feeling appreciated. Crabcakes and some feed money should do it :)

You and Carrie ride over and we will fix you up. It was 70 here today.

Great pics, injun brave. Looks like you live the good life as noted from the big smile on your face.

 

Our crabs are quite different. Our claws more slender, body less square. Shell looks much thicker on your crabs. We also cook ours with Old Bay to add some spice to life.

 

Someday I hope to get to Aussieland.

That's some mighty fine looking grub you have there....

I've always had a hard time appreciating "catch and release" fishing.
